So today I woke up hungry again, and decided to try out my Seitan cubes and tofu for the first time. I measured out the serving and prepared half of that... and was still stuffed. I ended up having to eat the rest of my breakfast as brunch.
That’s about how much was left. But I made a breakfast scramble with tofu, seitan, mushrooms, sweet potatoes, red and green bell pepper, onions and avocado and almond cheese. I also had my smoothie which was more orange and cranberry based today but still had fruits that cover more than half my daily recommendentaion of vitamins.
I had an interview this afternoon and I must say it went terrible! As you know I’ve been battling this cold/flu and trying my best to not let it overcome my body. It seems to be a stronger virus than anticipated because on top of feeling lightheaded during the interview, my temp rose. Now I’m used to nervous sweat so I know the difference, this wasn’t that. My temperature spiked and soon sweat was dripping on the table and the they had to go grab tissue for me lol. I had previously gave them a heads up that I was currently in the middle of a brawl with the flu so they weren’t shocked but I am nervous about if I’ll get it now. Usually after the second interview you’re told right away, and I wasn’t 😔. I’m really bummed but I don’t want to let it overwhelm me or cause that little demon to emerge. Especially since I have an interview on Monday.
Today is also my gym rest day, which I think I just need to accept I’m sick and rest anyway, so that’s good but let’s get back to this vegan stuff
Technical mumbo jumbo
Now as far as this diet goes, today has been the most difficult days. I feel like I’ve been stuffing my face all day and I’m so tired of it. Literally! Apparently plant based foods are quicker to digest too so it’s just so much work to keep eating lol. Sounds weird but let me explain...
I did a lot of research beforehand about the long-term effects of veganism. Most people feel wonderful but after a couple years or in some cases, months, they experience deficiencies, mainly micros. So your body requires certain vitamins and minerals in addition to the carbs, protein and fat. Meats typically provide you with the iron you need, as well as other key nutrients. Though very high in calories and fat, meats contain a high amount of your nutrients so you can eat less and gain more. So what I did was research which foods and how much of said food, would be required to give me what. Then, in an attempt to work smarter and not harder, I eliminated foods that only provide one or two micros. Instead I focused on low calorie foods that contained several vitamins like spinach, mushrooms,quinoa, etc. Then, I eat more of those foods and incorporate them into more meals. I do also take supplements but for the most part I have low calorie nutrient rich foods. The problem though is I still have to reach a certain amount of calories a day, which is now where the massive eating comes from.For example, 600 calories worth of spinach is far more to eat than 600 calories worth of chicken. So I’m stuffing myself all day. I’m intaking so much fiber so I’m full after every meal. Luckily, plant full doesn’t mean sleepy. But I’m just tired of chewing and chewing and swallowing and peeing and chewing and... well you get it.
But also like I said, I’m sick. I could just be being pissy because of that and I could be feeling full because usually when I’m sick I have a loss of appetite. I’ve been feeling nauseous too but I know that’s cause I’m sick, because that always happens lol. So hopefully when I’m better I can give a more positive insight... oh and the Seitan was soooooooo gooood. I think I will now be buying that due to its beeflike consistency. When I have a cheat meal I might make jollof quinoa and faux oxtails with the Seitan as oxtails. I can even make rice and stew with that in the stew. Seitan Fried rice, spaghetti and Seitan balls. Make meatloaf but seitanloaf.. now I’m fantasizing. Anywho, Goodnight.
