Nezi Goes Vegan: Day 5

So yesterday I had to wake up early and go to sprouts to buy more seitan, some tomatoes, and more multivitamins. In the middle of breakfast I got a call that I GOT THE JOB.
So like I said my blog post yesterday glitched and got deleted and I didn’t feel like retyping it, so today’s post is going to be super long cause it’s going to cover yesterday’s stuff and today.
So this morning, I had to fill out paperwork for the job. Doesn’t start till next year so I get to still clear my mind and allow myself to fall into a routine and also create. Also, this morning I did NOT wake up hungry, but yesterday (with the help of twitter) I realized that I was waking up hungry because I was SICK duh. That flu I was getting over was requiring a LOT out of me just to function. I was so light headed and my body hurt and I was pissy cause I was eating so much, which I explained why in the deleted post lol. So let’s get into it
The Technical Stuff
So, I did tons of research into this vegan thing, bought a book, asked other vegans for tips and advice, and learned that first things first, I need to have a daily multivitamin supplement. That’s just a failsafe that covers all my micros just in case my diet is insufficient in any way. Now to explain what that means let me break it down for you in Nezi terms.
Macros- proteins, fats, carbs.
When u eat, that’s the main thing your body needs and gets from your foods, we know this. Being vegan, you have plenty of proteins from various sources and obviously fats and carbs so no prob right?
Now, your body also needs micros, which are your vitamins and minerals. The trickier ones are going to be iron and b12. For many people, going vegan feels great until it hits thAt 3-4 year mark, then they grow mineral or vitamin deficiencies. That’s what I wanted to set myself up to avoid.
Now meat is an excellent source of iron, but I’m not eating Bambi anymore. And, if you recall, I was on a diet before I became vegan, so I don’t eat starchy carbs (bread, pasta, rice, etc) so I’m already behind. I also have to intake 2100 calories for the day, which is why I said that I’m sick and tired of eating. My jaw hurts.
This vegan journey has not made me crave meat once, but it has made me feel like I have to Stuff my face. See, what I wanted to do was eat smarter, not harder. Instead of eating (buying) 36 different types of veggies, grains and fruits; I decided to only buy foods that contain several vitamins and minerals (like spinach and mushrooms) instead of buying something that only has vitamin C. So that way I’m killing two birds with one stone. So I try to add those superfoods into every meal, somehow and some way.
Now, remember I still have to meet my calorie intake. Even with the amount of spinach it requires to meet my daily percentage of vitamin, that still isn’t that many calories worth of spinach. For example, 600 calories of chicken is less to eat than 600 calories of mushrooms.
I know you’re thinking, that’s great , less calories so less weight. Wrong. No. I’ll die lol. So I’m literally having to Stuff my face in order to ingest 2100-2300 calories so I can feel good when I’m lifting.
Also, this vegan diet... really messes with your bowels. I already had healthy bowel movements cause fibre is my thing, but THIS!?! No. You literally digest all ur food in one hour... and THATS a stretch. Like today, my food digested before I finished my meal and I had to use the bathroom. I basically have the digestive system of a puppy. But, I’ve lost five pounds already, (water weight mostly), I’m not as moody, my hair and nails are growing but skin is uh... pimples 😔.
I have no aches or pains and I feel lean.
I just can’t imagine how much different I feel I’m just five days and how much energy I have. It’s amazing. And my workout tonight was THREE HOURS, my muscles weren’t sore, they were stronger, could do more. (Plus that ramen yesterday really helped clear whatever was living in my throat, though my throat still hurts)
Ok back to the good stuff.
Today I ate my dry flaxseed,buckwheat, quinoa, and corn cereal on the go. Not much of a breakfast so I decided to make tacos for brunch. I used wheat flour and sunflower seed oil to make tortillas, I used tofu to make a scrambled egg type topping. Chopped up sweet potatoes and red onions and some meatless ground beef crumbles, of course I chopped seitan. I’m most proud of this cilantro lime eggplant Salsa I made (delicious and spicy) and I got the cubes almond cheese and made a chickpea refried bean dip. It was marvelous
